Ingredients
- 3 apples - I used fuji apples but you can use granny smith if you prefer a tart flavour
- 3 eggs
- 1 cup plain flour
- 1 cup sugar - I used brown sugar but you can use white if you prefer
Instructions
- Preheat oven to 200C (400F)
- Peel and roughly chop the apples
- Mix the eggs, flour and sugar in a bowl using an electric mixer until the batter is smooth
- Fold the chopped apples into the batter
- Pour into a small cake tin - mine's a 20cm round tin
- Bake in oven for 20mins at 200C, then lower temperature to 160C and bake for another 20mins until golden.
Serve with a side of vanilla ice cream for a decadent dessert, or have it as is with a cup of nice tea.
